This High Protein Lasagna Soup is hearty, cheesy, and loaded with protein. Ready in under an hour, it’s the perfect one pot healthy comfort food for family dinners or meal prep.

- 1 tbsp olive oil
- 1 lb lean ground beef
- 1/2 cup onion, minced
- 2 tbsp garlic, minced
- 28 oz crushed tomatoes
- 1 bay leaf
- 1 tsp dried basil
- 1 tsp dried parsley
- 1 tsp dried oregano
- 4 cups low sodium beef broth
- 2 cups water
- 2 cups pasta (reginetti or lasagna noodles)
- 1/4 cup ricotta (for serving)
- 1/4 cup parmesan (for serving)
Instructions
- Heat olive oil in a large pot. Brown the beef until cooked through.
- Add onion and garlic, sauté until fragrant.
- Stir in tomatoes, broth, water, and seasonings. Simmer for 15 minutes.
- Add pasta and cook until al dente, stirring occasionally.
- Remove bay leaf. Serve hot with ricotta, parmesan, and fresh herbs.
Notes
For meal prep, cook pasta separately to avoid sogginess. Store in fridge 4 days or freeze up to 3 months. Add beans or high-protein pasta for an extra boost.
