White Lasagna Soup – A Creamy Twist on Classic Comfort Food

Description

This White Lasagna Soup is creamy, cheesy, and comforting. Made with Italian sausage, spinach, white beans, and three kinds of cheese, it’s the ultimate one pot dinner for cozy nights.


Ingredients

  • 1 lb Italian sausage
  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 6 cups chicken broth
  • 1 (15 oz) can white beans, rinsed
  • 1 cup heavy cream
  • 2 cups spinach, chopped
  • 1 1/2 cups ricotta cheese
  • 1 cup mozzarella, shredded
  • 1/2 cup Parmesan, grated
  • 8 oz lasagna noodles, broken
  • Salt & pepper to taste

Instructions

  1. Cook sausage in a large pot until browned; set aside.
  2. Sauté onion and garlic, then add broth and beans. Bring to a simmer.
  3. Stir in cream, spinach, ricotta, mozzarella, and Parmesan.
  4. Add noodles and cook until tender, about 10 minutes.
  5. Return sausage to the pot, season with salt and pepper, and simmer 5 minutes more.
  6. Serve hot with garlic bread and extra cheese.

Notes

Store in fridge up to 4 days or freeze up to 3 months. Reheat with extra broth if needed. Add mushrooms or zucchini for more veggies, or swap sausage for chicken to lighten it up.
