- 4 boneless, skinless chicken thighs
- 1 cup long-grain white rice
- 2 cups low-sodium chicken broth
- 1 lemon, juiced and zested
- 4 cloves garlic, minced
- 1 tsp dried thyme

- Salt and pepper, to taste
- 2 tbsp olive oil (optional, for browning)
- Fresh parsley, chopped
- Lemon wedges, for serving
Instructions
- Optional: Brown chicken thighs in olive oil 2–3 minutes per side for added flavor.
- In slow cooker, mix rice, broth, lemon juice, zest, garlic, thyme, rosemary, salt, and pepper.
- Place chicken on top of rice mixture. Cover and cook on low 6–7 hours or high 3–4 hours.
- Fluff rice, garnish with parsley, and serve with lemon wedges.
Notes
Use thighs for the juiciest results. Rinse rice before cooking. For a creamy twist, stir in Greek yogurt at the end. Leftovers reheat beautifully with a splash of broth.
