Ingredients

  • 4 boneless, skinless chicken thighs
  • 1 cup long-grain white rice
  • 2 cups low-sodium chicken broth
  • 1 lemon, juiced and zested
  • 4 cloves garlic, minced
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • Salt and pepper, to taste
  • 2 tbsp olive oil (optional, for browning)
  • Fresh parsley, chopped
  • Lemon wedges, for serving

Instructions

  1. Optional: Brown chicken thighs in olive oil 2–3 minutes per side for added flavor.
  2. In slow cooker, mix rice, broth, lemon juice, zest, garlic, thyme, rosemary, salt, and pepper.
  3. Place chicken on top of rice mixture. Cover and cook on low 6–7 hours or high 3–4 hours.
  4. Fluff rice, garnish with parsley, and serve with lemon wedges.

Notes

Use thighs for the juiciest results. Rinse rice before cooking. For a creamy twist, stir in Greek yogurt at the end. Leftovers reheat beautifully with a splash of broth.
