Description

Pumpkin Filling

  • 1 (15 oz) can pumpkin puree
  • 1 cup sugar
  • 3 large eggs
  • 2 tsp pumpkin pie spice
  • 1/2 tsp salt
  • 2 tsp vanilla extract
  • 2/3 cup heavy cream

Streusel Topping

  • 2 cups flour
  • 1 1/2 cups sugar
  • 2 tsp cinnamon
  • 1/2 tsp salt
  • 12 tbsp butter, melted

Instructions

  1. Preheat oven to 375°F. Butter a 12-inch cast iron skillet or baking dish.
  2. Whisk pumpkin, sugar, eggs, spices, salt, and vanilla. Add cream and whisk until smooth. Pour into dish.
  3. Combine flour, sugar, cinnamon, and salt. Add melted butter and mix until crumbly. Sprinkle over pumpkin layer.
  4. Bake for 40–45 minutes, until set and golden brown. Let cool 10 minutes before serving.
  5. Serve warm with ice cream or whipped cream.

Notes

Make ahead by preparing the layers separately and refrigerating for up to 48 hours. Sprinkle topping before baking. Store leftovers up to 5 days refrigerated.
