Instructions
- Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a medium bowl, whisk together flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
- In a large bowl, beat softened butter and brown sugar until light and fluffy.
- Add maple syrup, egg, pumpkin puree, and vanilla extract. Mix until smooth.
- Gradually add dry ingredients to the wet mixture, stirring until just combined. Do not overmix.
- Drop dough by tablespoon onto prepared baking sheet, spacing 2 inches apart. Sprinkle tops with granulated sugar if desired.
- Bake for 10-12 minutes, until edges are set and centers remain soft.
- Cool on baking sheet for 5 minutes before transferring to a wire rack to cool completely.
Notes
Use pure maple syrup for authentic flavor. Blot pumpkin puree with a paper towel to reduce moisture for chewier cookies. Chill dough for 15-20 minutes if you prefer thicker cookies. Drizzle with maple glaze or cream cheese frosting for an extra festive touch.
