- ½ cup unsalted butter, softened
- ½ cup creamy peanut butter
- ½ cup granulated sugar (plus extra for topping)
- ½ cup brown sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1¼ cups all-purpose flour
- ¾ teaspoon baking soda
- ¼ teaspoon salt
- Filling:
- ½ cup creamy peanut butter
- ¼ cup butter, softened
- 1 cup powdered sugar
- 1 teaspoon vanilla extract
- 1–2 tablespoons milk
Instructions
- Preheat oven to 350°F. Line baking sheets with parchment paper.
- Cream butter, peanut butter, and sugars until fluffy. Beat in egg and vanilla.
- Mix dry ingredients separately and combine to form dough.
- Shape dough into ovals, press with fork, and sprinkle with sugar.
- Bake 8–10 minutes until golden. Cool completely.
- Beat filling ingredients until smooth, adding milk for consistency. Spread between two cookies.
Notes
To keep cookies soft, store in airtight containers. Add sea salt or dip in chocolate for gourmet variation.
