Description

Tender chicken breasts and golden potatoes simmer slowly in a creamy garlic Parmesan sauce for the ultimate cozy, family-friendly crockpot dinner.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1.5 lbs baby potatoes, halved
  • 1 cup chicken broth
  • ½ cup grated Parmesan cheese
  • 4 cloves garlic, minced
  • 1 tbsp Italian seasoning
  • 1 tsp salt
  • ½ tsp black pepper
  • ½ tsp red pepper flakes (optional)
  • 2 tbsp olive oil
  • Fresh parsley for garnish

Instructions

  1. Halve the potatoes and mince the garlic.
  2. Rub chicken with olive oil, Italian seasoning, salt, and pepper.
  3. Layer potatoes in crockpot, then add seasoned chicken.
  4. Pour broth, add garlic and Parmesan on top.
  5. Cook on low 6–7 hours or high 3–4 hours.
  6. Serve with sauce spooned over and garnish with parsley.

Notes

For extra creaminess, add cream cheese or heavy cream in the last hour. Leftovers reheat beautifully for lunch the next day!
