Description

This Easy Lasagna Soup has all the cheesy, saucy comfort of lasagna in a quick one pot recipe. Made with ground beef, pasta, and a rich tomato broth, it’s the perfect family dinner for busy nights.


Ingredients

  • 1 lb ground beef
  • 1 onion, diced
  • 4 garlic cloves, minced
  • 1 (15 oz) can diced tomatoes
  • 1 (15 oz) can tomato sauce
  • 1/3 cup tomato paste
  • 4 cups chicken broth
  • 1 cup water (optional, for consistency)
  • 1 tbsp Italian seasoning
  • 8 oz bowtie pasta
  • Ricotta, mozzarella, and parmesan cheese for topping
  • Fresh parsley for garnish

Instructions

  1. In a large pot, sauté ground beef with onions and garlic until browned.
  2. Add tomatoes, tomato sauce, tomato paste, broth, water, and seasonings. Stir to combine.
  3. Bring to a boil, then add pasta. Reduce heat and simmer 10–15 minutes until pasta is cooked.
  4. Adjust consistency with extra broth if needed.
  5. Serve hot, topped with ricotta, mozzarella, parmesan, and parsley.

Notes

For meal prep, cook pasta separately to avoid sogginess. Store soup in the fridge up to 5 days or freeze for 3 months. Reheat with extra broth as needed.
