This Easy Lasagna Soup has all the cheesy, saucy comfort of lasagna in a quick one pot recipe. Made with ground beef, pasta, and a rich tomato broth, it’s the perfect family dinner for busy nights.

- 1 lb ground beef
- 1 onion, diced
- 4 garlic cloves, minced
- 1 (15 oz) can diced tomatoes
- 1 (15 oz) can tomato sauce
- 1/3 cup tomato paste
- 4 cups chicken broth
- 1 cup water (optional, for consistency)
- 1 tbsp Italian seasoning
- 8 oz bowtie pasta
- Ricotta, mozzarella, and parmesan cheese for topping
- Fresh parsley for garnish
Instructions
- In a large pot, sauté ground beef with onions and garlic until browned.
- Add tomatoes, tomato sauce, tomato paste, broth, water, and seasonings. Stir to combine.
- Bring to a boil, then add pasta. Reduce heat and simmer 10–15 minutes until pasta is cooked.
- Adjust consistency with extra broth if needed.
- Serve hot, topped with ricotta, mozzarella, parmesan, and parsley.
Notes
For meal prep, cook pasta separately to avoid sogginess. Store soup in the fridge up to 5 days or freeze for 3 months. Reheat with extra broth as needed.
