- 2 medium zucchinis, sliced into ¼-inch rounds
- 2 tablespoons olive oil
- ½ cup freshly grated parmesan cheese
- ½ teaspoon garlic powder
- ½ teaspoon Italian seasoning
- ¼ teaspoon sea salt
- ¼ teaspoon black pepper
- Optional: chopped parsley or lemon zest for garnish
Instructions
- Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper or spray lightly with olive oil.
- Pat zucchini slices dry with a paper towel. Place in a bowl and toss with olive oil, garlic powder, Italian seasoning, sea salt, and black pepper.
- Add most of the grated parmesan (reserve 2-3 tablespoons) and toss to coat.
- Arrange zucchini slices in a single layer on the baking sheet without overlapping. Sprinkle reserved parmesan on top of each slice.
- Bake for 18-22 minutes, flipping halfway, until cheese is golden and zucchini edges are crispy.
- Let cool for 1-2 minutes. Garnish with chopped parsley, lemon zest, or red pepper flakes.
- Serve hot and crispy as a side dish or snack.
Notes
Use freshly grated parmesan for best crisping. Dry zucchini slices thoroughly to avoid sogginess. Don’t overcrowd the baking sheet. For added crunch, mix breadcrumbs with the parmesan before baking. High oven heat is essential for golden, crispy results.
