- 1 yellow onion, diced
- 10 cloves garlic, minced
- 1 lb carrots, diced
- 2 russet potatoes, diced
- 32 oz vegetable broth
- 2 cups chopped broccoli florets
- 8 oz sharp cheddar cheese, freshly grated
- 2 cups milk
- 2 tbsp all-purpose flour
- Salt, to taste
Instructions
- Sauté onion and garlic in butter until soft.
- Add carrots, potatoes, and broth. Boil until tender.
- Whisk milk and flour, add to pot. Stir in broccoli and simmer until thickened.
- Add cheese and stir until melted. Season to taste.
- Serve warm with crusty bread.
