This Creamy Vegetable Soup is the perfect cozy comfort meal—made with broccoli, carrots, and potatoes in a rich, cheesy base. Wholesome, satisfying, and easy to make in one pot!


Ingredients

  • 2 tbsp butter
  • 1 yellow onion, diced
  • 10 cloves garlic, minced
  • 1 lb carrots, diced
  • 2 russet potatoes, diced
  • 32 oz vegetable broth
  • 2 cups chopped broccoli florets
  • 8 oz sharp cheddar cheese, freshly grated
  • 2 cups milk
  • 2 tbsp all-purpose flour
  • Salt, to taste

Instructions

  1. Sauté onion and garlic in butter until soft.
  2. Add carrots, potatoes, and broth. Boil until tender.
  3. Whisk milk and flour, add to pot. Stir in broccoli and simmer until thickened.
  4. Add cheese and stir until melted. Season to taste.
  5. Serve warm with crusty bread.

Notes

Cut veggies small for even cooking. Use freshly grated cheddar. Add cream for richness or chicken for protein. Great for meal prep—keeps 4 days refrigerated.
