- 6 strips turkey bacon
- ½ yellow onion, finely diced
- 1½ cups chopped button mushrooms
- 3 cloves garlic, minced
- 2 (10.5-oz) cans cream of mushroom soup
- ¼ cup milk
- 1 cup shredded Monterey Jack cheese
- Salt and pepper, to taste
- 4 (14.5-oz) cans cut green beans, drained
- 1½ cups French fried onions
Instructions
- Cook the turkey bacon until crisp, then crumble. Reserve 2 tbsp drippings.
- Sauté onions for 5 minutes, add mushrooms for 5 minutes more, then garlic for 1 minute.
- Stir in soup, milk, cheese, and turkey bacon. Season to taste.
- Fold in green beans until coated.
- Pour into greased 9×13-inch pan, top with fried onions.
- Bake at 350°F for 30 minutes until golden and bubbly.
Notes
Make ahead by assembling the casserole a day early. Use freshly shredded cheese for the best melt. For extra crisp topping, broil briefly before serving.
