- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 small onion, diced
- 1/2 cup sun-dried tomatoes, chopped
- 1/2 cup vegetable broth
- 1 cup heavy cream (or coconut cream for vegan)
- 2 cans (15 oz) butter beans, rinsed and drained
- 1/2 cup grated Parmesan cheese
- 1 teaspoon Italian seasoning
- 1/2 teaspoon red pepper flakes
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup fresh basil, chopped
Instructions
- Heat olive oil in a skillet over medium heat. Sauté garlic and onion until fragrant.
- Add sun-dried tomatoes and cook 1 minute.
- Pour in broth and bring to a simmer.
- Stir in cream and simmer gently.
- Add butter beans and simmer 5–7 minutes.
- Stir in Parmesan, seasonings, and basil. Serve warm.
Notes
For vegan: use coconut cream and nutritional yeast. Add spinach or kale for extra greens. Serve with crusty bread for dipping!
