  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 small onion, diced
  • 1/2 cup sun-dried tomatoes, chopped
  • 1/2 cup vegetable broth
  • 1 cup heavy cream (or coconut cream for vegan)
  • 2 cans (15 oz) butter beans, rinsed and drained
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon red pepper flakes
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup fresh basil, chopped

Instructions

  1. Heat olive oil in a skillet over medium heat. Sauté garlic and onion until fragrant.
  2. Add sun-dried tomatoes and cook 1 minute.
  3. Pour in broth and bring to a simmer.
  4. Stir in cream and simmer gently.
  5. Add butter beans and simmer 5–7 minutes.
  6. Stir in Parmesan, seasonings, and basil. Serve warm.

Notes

For vegan: use coconut cream and nutritional yeast. Add spinach or kale for extra greens. Serve with crusty bread for dipping!
