Description

This Creamy Roasted Garlic Tomato Soup is rich, cozy, and made from roasted tomatoes and caramelized garlic for incredible depth of flavor. The perfect comfort food!


Ingredients

  • 2 lbs ripe tomatoes, halved
  • 1 head garlic
  • 1 medium onion, sliced
  • 3 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp dried basil
  • 1/2 tsp sugar (optional)
  • 2 cups broth
  • 1/2 cup heavy cream
  • Fresh herbs, for garnish

Instructions

  1. Roast tomatoes, garlic, and onion at 400°F for 35 minutes.
  2. Squeeze roasted garlic out of skins and blend everything with broth until smooth.
  3. Pour into a pot, add cream, and simmer for 10 minutes.
  4. Season to taste and serve with cream swirl and herbs.

Notes

Use ripe tomatoes for the best flavor. Substitute coconut milk for a dairy-free option. Serve with crusty bread or grilled cheese for a cozy meal.
