Ingredients

- 2 lbs ripe tomatoes, halved
- 1 head garlic
- 1 medium onion, sliced
- 3 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp dried basil
- 1/2 tsp sugar (optional)
- 2 cups broth
- 1/2 cup heavy cream
- Fresh herbs, for garnish
Instructions
- Roast tomatoes, garlic, and onion at 400°F for 35 minutes.
- Squeeze roasted garlic out of skins and blend everything with broth until smooth.
- Pour into a pot, add cream, and simmer for 10 minutes.
- Season to taste and serve with cream swirl and herbs.
Notes
Use ripe tomatoes for the best flavor. Substitute coconut milk for a dairy-free option. Serve with crusty bread or grilled cheese for a cozy meal.
