  • 8 oz block feta cheese, drained from brine
  • 1/4 cup plain Greek yogurt (full-fat)
  • 1 cup pumpkin puree
  • 12 tbsp honey
  • 1 tsp dried thyme
  • Freshly cracked black pepper
  • 1/4 cup chopped walnuts
  • Fresh thyme leaves
  • Baguette slices or crackers

Instructions

  1. Add feta and Greek yogurt to a food processor. Blend until smooth.
  2. Add pumpkin puree, honey, thyme, and pepper. Blend again until creamy.
  3. Chill for 30–60 minutes to firm up.
  4. Top with walnuts, honey drizzle, and thyme. Serve with toasted bread or crackers.

Notes

Make ahead up to one day; chill covered. Add toppings right before serving. Toast walnuts for extra flavor and use brined feta for best texture.
