Description

This Creamy Jiffy Cornbread Casserole is a buttery, golden, and cozy side dish made with creamed corn, sour cream, and Jiffy mix — perfect for holidays or weeknight dinners.

  • 1 (14.75 oz) can whole kernel sweet corn, drained
  • 1 (14.75 oz) can cream-style sweet corn
  • 1 (8.5 oz) box Jiffy corn muffin mix
  • 2 large eggs
  • 1 cup sour cream
  • ½ cup melted butter

Instructions

  1. Preheat oven to 350°F and coat an 8-inch baking dish with nonstick spray.
  2. In a large bowl, combine corn, creamed corn, Jiffy mix, eggs, sour cream, and melted butter. Mix gently.
  3. Pour into baking dish and bake 40–50 minutes until golden and set in the center.
  4. Cool 5 minutes before serving.

Notes
