Description

This Creamy Crack Corn Casserole is a cozy, cheesy side made with corn, cream cheese, ranch seasoning, and turkey bacon — baked to golden, bubbly perfection.

Ingredients

Scale
  • 2 tbsp butter
  • 2 (12 oz) packages frozen corn
  • 1 (1 oz) packet ranch seasoning mix
  • 1 (8 oz) block cream cheese, cubed
  • 1 cup cooked turkey bacon, chopped
  • 2 cups shredded cheddar jack cheese, divided

Instructions

  1. Preheat oven to 350°F and lightly grease a baking dish.
  2. In a large skillet, melt butter and add corn. Sauté until softened.
  3. Stir in cream cheese until melted and smooth.
  4. Add ranch seasoning and turkey bacon. Mix well.
  5. Remove from heat, stir in 1 cup cheese, then transfer to baking dish.
  6. Top with remaining cheese and bake 20–30 minutes until bubbly.

Notes

Make ahead by assembling up to a day in advance. Broil 2 minutes at the end for extra color and crispness.
