- 1 (12–16 oz) package potato gnocchi
- 10 oz turkey sausage, sliced
- 2 tbsp olive oil
- 2 tbsp butter
- 2 cloves garlic, minced
- 1 1/2 cups butternut squash puree
- 1/2 cup broth
- 1/2 cup milk or half-and-half
- 1/4 cup Parmesan cheese
- 1 tsp thyme leaves
- Salt and pepper, to taste
- Optional: red pepper flakes
Instructions
- Boil gnocchi until it floats, then drain.
- Brown turkey sausage in olive oil; set aside.
- Melt butter, add garlic, then stir in squash puree, broth, milk, and Parmesan.
- Season with thyme, salt, and pepper.
- Combine gnocchi and sausage, simmer 2–3 minutes. Garnish and serve.
Notes
Make vegetarian by skipping sausage and adding sautéed mushrooms or sage. Use half-and-half for a richer sauce. Garnish with thyme and extra Parmesan before serving.
