Ingredients

  • 1 (12–16 oz) package potato gnocchi
  • 10 oz turkey sausage, sliced
  • 2 tbsp olive oil
  • 2 tbsp butter
  • 2 cloves garlic, minced
  • 1 1/2 cups butternut squash puree
  • 1/2 cup broth
  • 1/2 cup milk or half-and-half
  • 1/4 cup Parmesan cheese
  • 1 tsp thyme leaves
  • Salt and pepper, to taste
  • Optional: red pepper flakes

Instructions

  1. Boil gnocchi until it floats, then drain.
  2. Brown turkey sausage in olive oil; set aside.
  3. Melt butter, add garlic, then stir in squash puree, broth, milk, and Parmesan.
  4. Season with thyme, salt, and pepper.
  5. Combine gnocchi and sausage, simmer 2–3 minutes. Garnish and serve.

Notes

Make vegetarian by skipping sausage and adding sautéed mushrooms or sage. Use half-and-half for a richer sauce. Garnish with thyme and extra Parmesan before serving.
