Description

These creamy baked mashed potatoes are buttery, fluffy, and rich—whipped with cream cheese and baked to golden perfection. The perfect side dish for Thanksgiving, Christmas, or any cozy dinner.


Ingredients

  • 5 lbs russet potatoes, peeled and cubed
  • 8 tbsp salted butter, melted
  • 2 tbsp salted butter, cold
  • 8 oz cream cheese, softened and cubed
  • 1 cup half and half, warmed
  • 1/2 tsp salt
  • Pepper, to taste
  • Chives or herbs for garnish (optional)

Instructions

  1. Boil potatoes in salted water until tender, about 10–15 minutes. Drain well.
  2. Return to pot and cook over low heat for 3 minutes to remove excess moisture.
  3. Mash potatoes, then mix in melted butter, cream cheese, salt, and pepper. Gradually add warm half and half until smooth.
  4. Spread into greased 9×13 baking dish. Dot top with cold butter cubes.
  5. Bake at 350°F for 45 minutes, until golden and heated through. Garnish and serve warm.

Notes

Cut potatoes evenly for consistent texture. Make ahead up to 2 days, refrigerate, and bake before serving. Add cheese for extra indulgence!
