Soft, chewy, coconut-infused Rice Krispy treats that are buttery, gooey, and perfectly balanced — the ultimate no-bake dessert with tropical flavor.


Ingredients

  • 6 tablespoons unsalted butter
  • 8 cups miniature marshmallows
  • 6 cups crisp rice cereal
  • 2 cups additional mini marshmallows
  • 1½ cups sweetened shredded coconut (plus ¼ cup for topping)

Instructions

  1. Melt butter and 8 cups marshmallows over medium heat.
  2. Stir in cereal and coconut.
  3. Fold in remaining marshmallows for extra gooeyness.
  4. Press lightly into pan and top with more coconut.
  5. Cool and cut into squares.

Notes

For best texture, don’t press too hard. Use fresh marshmallows and low heat. Add lime zest or chocolate drizzle for variations.
