Ingredients

  • 2/3 cup granulated sugar
  • 1/2 cup vegetable or canola oil
  • 2 large eggs
  • 2/3 cup mashed ripe banana (about 2 small bananas)
  • 1 teaspoon vanilla extract
  • 1 ⅔ cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon salt

Cinnamon & Sugar Topping

  • 3 tablespoons melted butter
  • 1/4 cup granulated sugar
  • 1/2 teaspoon ground cinnamon

Instructions

  1. Preheat oven to 375°F (190°C) and grease or line a 12-cup muffin tin.
  2. Whisk together sugar, oil, and eggs until smooth. Add mashed bananas and vanilla extract.
  3. Stir in flour, baking soda, cinnamon, and salt until just combined.
  4. Divide batter evenly into muffin cups (3/4 full) and bake for 17–21 minutes until golden.
  5. Cool 5 minutes, then dip tops in melted butter and cinnamon-sugar mixture.

Notes

Use very ripe bananas for maximum flavor. Don’t overmix the batter for soft muffins. Store at room temperature for 3 days or freeze up to 3 months.
