- 3 lbs sweet potatoes (5–6 medium)
- 6 tablespoons butter, melted
- 1/2 cup sugar
- 2 large eggs
- 2 teaspoons vanilla extract
- 1 teaspoon cinnamon
- 1 teaspoon salt
- 1/4 cup half-and-half
Streusel Topping:
- 3 tablespoons butter, softened
- 1 cup brown sugar
- 1/3 cup flour
Instructions
- Preheat oven to 400°F. Pierce and bake sweet potatoes for 50–60 minutes until soft. Cool slightly.
- Scoop flesh into a bowl; add butter, sugar, eggs, vanilla, cinnamon, salt, and half-and-half. Mix until smooth.
- Spread into a greased 9×13-inch dish.
- Mix topping ingredients to form coarse crumbs; sprinkle over casserole.
- Bake at 350°F for 25–30 minutes until topping is golden and filling is warm.
- Cool 10 minutes before serving.
Notes
Make ahead by assembling up to 2 days in advance without topping. Add streusel just before baking. Add pecans or marshmallows for extra texture!
