Ingredients

- 2 lbs carrots, peeled and sliced
- 1/4 cup brown sugar
- 3 tbsp butter, melted
- 1 tsp olive oil
- 1/4 tsp salt
- 1/4 tsp cinnamon (optional)
- Chopped parsley for garnish
Instructions
- Preheat oven to 400°F. Slice carrots evenly and par-boil for 5 minutes.
- Drain and toss with butter, oil, brown sugar, salt, and cinnamon.
- Spread on a baking dish and roast for 10 minutes. Stir and roast 10 more minutes until caramelized.
- Cool slightly and garnish with parsley. Serve warm.
Notes
Cover with foil if you like your carrots extra tender, or cook uncovered for a caramelized glaze. Substitute honey or maple syrup for a natural sweetness.
