Description

Tender roasted carrots coated in a buttery brown sugar glaze—sweet, savory, and the perfect side for any meal or holiday feast.


Ingredients

Scale
  • 2 lbs carrots, peeled and sliced
  • 1/4 cup brown sugar
  • 3 tbsp butter, melted
  • 1 tsp olive oil
  • 1/4 tsp salt
  • 1/4 tsp cinnamon (optional)
  • Chopped parsley for garnish

Instructions

  1. Preheat oven to 400°F. Slice carrots evenly and par-boil for 5 minutes.
  2. Drain and toss with butter, oil, brown sugar, salt, and cinnamon.
  3. Spread on a baking dish and roast for 10 minutes. Stir and roast 10 more minutes until caramelized.
  4. Cool slightly and garnish with parsley. Serve warm.

Notes

Cover with foil if you like your carrots extra tender, or cook uncovered for a caramelized glaze. Substitute honey or maple syrup for a natural sweetness.
