Sweet Potato Filling
- 3 lbs sweet potatoes
- 1/4 cup sugar
- 4 tbsp butter, melted
- 1/2 cup milk
- 2 large eggs
- 1 tsp vanilla
- 1/2 tsp salt
Topping
- 1 cup brown sugar
- 1/2 cup flour
- 1 cup chopped pecans
- 6 tbsp melted butter
- 1/4 tsp cinnamon
Instructions
- Preheat oven to 350°F. Bake sweet potatoes until soft (about 1.5 hours). Peel and cool slightly.
- Blend sweet potatoes with sugar, butter, milk, eggs, vanilla, and salt until smooth.
- Spread into greased 2-quart dish.
- In a bowl, combine brown sugar, flour, pecans, cinnamon, and butter to form a crumble. Sprinkle over filling.
- Bake 30 minutes until topping is golden brown. Serve warm.
Notes
Make ahead and refrigerate up to 2 days before baking. Add marshmallows or orange zest for a fun twist!
